It has a memorable melodic hook, multiple sections, solid musicianship, obviously required rehearsal(ie wasn't an off-the-cuff jam, not that that would necessarily make it less of a song)...what am I missing?

I think he was talking about what the audience expected. Most love songs are written about romantic love. He was explaining the woman who taught him the most about love wasn't young and physically beautiful. She was strong, dignified and fair, she had the patience and love to comfort those around her that needed her without being judgemental. That's beautiful on a whole different level.
